chili...frito pie...and potatoes

Dinner #1

Tonight I made two dinners so we would have leftovers to last a few more days. My first dinner was a turkey chili, based off of the delicious chili recipes girls have been talking about on the what's cooking boards.


I didnt really follow a recipe, but here's a summary of ingredients.

-a pound of ground turkey, browned and drained
-chopped red onion, browned with the meat
-2 ears of fresh corn, cut off the cob and thrown in while the meat was cooking
-1 jar of green chile salsa
-1 package of chili mix
-1 can of beans
-water


i have never made chili before and never ate it growing up. i thought that you ate it with cheese, sour cream and fritos, so this is what i packed for our lunches tomorrow. my husband, however, let me know that chili is eaten with crackers and that i had layed out the ingredients for frito pie. oh well, im sure it will taste good either way.

Dinner #2

my second dinner was the one we actually ate tonight. i grilled some omaha steaks that my husband's parents had sent to us last week, which we ate with twice baked potatoes and roasted asparagus.

for the potatoes, i didnt really follow a recipe either. i roasted the potatoes in the oven like i normally would until they were cooked through and crispy. i then cut the potatoes in half and scooped out the insides into a bowl. i added light boursin cheese and a few splashes of skim milk, mixed it up, and stuffed it back into the empty shells. twelve more minutes in the oven and a few extra minutes under the broiler and they were ready.

mmmmm, feta.


I wish I was in Greece, eating feta.
